I had a major craving for chocolate the other night. Not a “grab some chocolate chips” or “have a square of dark chocolate” craving – a craving craving. You know how it goes. I didn’t want to bake, but ended up doing so.
While searching the interwebs, I found a vegan recipe on Karissasvegankitchen.com for Fudgy Vegan Brownies…..and then I changed them back to regular brownies because I’m a rebel like that.
- 1/2 cup melted butter (or margarine) – hot
- 1-1/2 cup sugar (I used just over 1 cup and could use 3/4 of a cup and be fine)
- 1/3 cup milk
- 3 tsp vanilla extract
- 1 cup flour
- 3/4 cup cocoa powder
- 3/4 tsp baking powder
- 1/4 tsp salt
- 1 cup chocolate chips
Preheat the oven to 350 F. Line an 8×8 baking pan with parchment paper. I sprayed the bottom of the pan with cooking spray then folded and told off the parchment paper. It wasn’t perfect, but that didn’t bother me at all.
Mix the hot melted butter and sugar together in a big bowl. Add the milk & vanilla. Add the cocoa (and be careful, I wore a fine mist of cocoa because it tried to escape). Mix in the baking powder, salt then the flour.
Fold in the chocolate chips and spread the whole works in the lined baking pan.
Bake for 25 to 30 minutes (I just baked it for 30 and left it at that). They came out ooey gooey and perfect. When they cooled down, they solidified a little bit which was also perfect.
I sifted a little icing sugar on the top and craving was fixed.
These are pretty good cold, not gonna lie, but warm they are outstanding.
