The weather is changing here, spring is trying to spring. I don’t kid myself into believing winter is over – it’s Calgary and winter doesn’t end here until we are heartily sick of it and Momma Nature gets tired of tormenting us. There is no month here that is safe from winter weather. Despite spring(ish) weather, I’ve been craving chili quite a bit lately, so I made some.


  • 1 lb ground beef
  • 1-1/2 cups of black beans – you can use kidney, I don’t have any. The Covid preppers clear those kidney beans out like crazy, but black beans don’t make the cut for some reason so I can always find those – and beans are beans, ladies & gentlemen. I cooked 2 cups of dry beans with a whole lot of water in the pressure cooker a couple hours before I wanted to start the chili.
  • 2 bell peppers, chopped
  • 2 tsp minced garlic
  • 1 medium onion, diced
  • 1 28oz can of tomatoes
  • 2 tsp tomato paste
  • 1/2 lb mushrooms (optional)
  • 1 cup zucchini (optional)
  • 1 tsp black pepper
  • 2 tsp chili powder
  • 1/2 tsp ancho chili powder
  • 2 tsp cumin
  • 1 tsp paprika
  • 1 tsp beef bouillon

Preheat the oven to 325 F. Brown the ground beef in an oven safe pot that has a lid – I used a cast iron dutch oven. Add the onion and cook until a little softened. Add everything else, give it all a good stir, pop the lid on and put it in the oven for a couple hours. There’s quite a bit of liquid in this and the oven temperature is pretty low, so it should be fine with no people interruptions, but I would check on it every half hour to an hour….burned chili is nasty so we don’t want that.

You can absolutely do this on the stove top, I just didn’t want to. I cook beef stew in the oven, as well. You could also start this earlier in the day and cook it in a slow cooker and you could do this in an Instant Pot, also.

Anything spicy can be left out for tender palates and just spice the servings that want it with some hot sauce. You can plop some plain yogurt or sour cream on a bowl, if needed, to help cool a spicy mouth down.
