Fruit Salad

With spring finally making an appearance here, fingers crossed it stays, I have the urge to eat fresh things….salads, fruit salad, fruit, vegetables…..sensing a theme here.
With supper the other night, barbequed pork chops, I made a salad with roasted romaine lettuce (try it, it’s amazing) and a dessert of chopped fruit with a little honey lemon sauce(?) syrup(?) on it.
Ingredients:
- fresh fruit, chopped into bite size pieces….I used 2 bananas, 8 strawberries, 1 large apple and 1 navel orange
- lemon juice – about 1/4 cup. If you have lime juice, use that instead – it’s amazing.
- honey – to taste. I like it a bit tart but add more if you like it sweeter. Start with a couple of tablespoons and mix really, really well before adding more. Taste and then decide.
Mix the lemon juice & honey and pour over the fruit. Mix together to coat everything.
Every once in a while, stir again until you get to serving time (the lemon juice helps keep the bananas & apples from getting brown-they taste fine but don’t look so lovely).
I made up some whipped cream, mostly because I finally managed to use the whisk attachment on my immersion blender without christening my kitchen and now I want to use it for everything.

That’s it. Crazy simple and so delicious.
I also took the orange peels, added them to a jar with vinegar and after a couple weeks brewing time, I will have a concentrated orange-vinegar cleaning solution. Smells amazing & kills grease on the stove. Do not use on stone, however, it is an acid and will pit it eventually.
