I made this recipe many, many, many years ago (it’s been around a long while) and I know for a fact there were no pecans in the one I made. Nor was there any baking involved. I’m 99% certain that it got me to lay graham cracker sheets in the bottom of the pan and cover with the pudding and such, then let it sit for a long time to soften up the crackers.
I cannot prove this theory, but I’m really certain. My problem? No graham crackers in one piece….just crumbs and I was not at all into mixing up butter and sugar and cookie crumbs to make a crust, but I knew I had oreos.
- 1 package of vanilla pudding (4 serving package)
- 1 package of chocolate pudding (4 serving package)
- 3 cups of milk
- 4 oz of cream cheese
- ½ cup of icing sugar
- 1 cup of whipping cream (or use cool whip – whatever you have)
- 14-16 oreo cookies
- 8×8 pan
I got out an 8×8 inch pan and plonked a bunch of oreos in the bottom of it. I broke a bunch up into smaller pieces, not tiny, just halves and quarters, and did a little fill in the empty spots action. Turns out 4 oreos across is just a tad too big to fit and 8×8 pan perfectly. Who knew?!
Make the puddings in separate bowls. Use 1-1/2 cups of milk per package – I know the package says 2 cups of milk – just use 1-1/2 cups – it’ll make the pudding stiffer.
I spread the vanilla pudding over the cookie layer.
Beat the cream cheese, icing sugar and whipping cream together until stiff peaks happen – don’t make butter, though.
I was going to go wild and make the puddings from scratch – and then decided “nah”. So, if you want to make them from scratch, there is a recipe on my website for vanilla pudding www.handcraftedbyradar.com/2021/06/12/vanilla-pudding/ and it seems I must rectify the lack of a chocolate pudding recipe – you’d think, given how much I love chocolate, that I would have one posted! If you don’t want to make your own, they’re a dollar something a box at the grocery store. You do you! 🙂
Spread about half of the mixture over the vanilla pudding layer, then spread the chocolate pudding over that.
Spread the rest of the cream cheese mixture over the top and put it all in the fridge to think about what it’s done.
Get a spoon and be prepared to fight for your share – it’s really good!
