Low Carb Breakfast Wrap
I want to preface this with….the wrap contents are low carb. The wrap I used, was not. If you want it lower carb, use a cauli wrap or another kind of low carb wrap commercially available.
My recent favourite breakfast, and still reigning champion, is a bowl of oatmeal with chili flakes, cheese and an over easy egg on top. But, I am famous for finding something and sticking with it – forever. My previous favourite breakfast? Over easy eggs on toast with cream cheese…..probably for a solid year or two. Before that? Toast with avocado, an over easy egg and feta cheese or goat cheese crumbled on it – that was probably a years’ worth of breakfast stability. Got anxious if I contemplated any other meal for breakfast – I have issues, I admit it.
So I try to hunt down alternatives to my usual. Weirdly enough, I am not like this with lunch or supper, but my breakfast needs to be predictable.
Today, I made this wrap because I am intentionally trying to get more vegetables into my diet – eat the rainbow – and I used to eat a variation of it once upon a time.
Enough with the explanation and peek into my brain and on with the show.
- eggs – however many you want to eat
- ½ tsp coconut oil
- 1 cup baby spinach
- 4 TB salsa or picante
- 2 TB cheese
- 4 TB banana peppers or bell peppers
- 1 tortilla or wrap
Heat up the coconut oil in a frying pan on medium, medium-high heat. Mix your egg(s) in a cup, bowl or glass….or be dish concious and just break it up in the frying pan.
When the oil is melted, add your egg(s). Scramble them. I let them set, gave them a mix, let them set, gave them a mix, flipped them around and called it good.
Flip your egg(s) out onto your tortilla.
Add the salsa to the pan along with the spinach and cook until the spinach is wilted and there’s less salsa juice. Add the peppers and heat them up. Top with the cheese, let it get a little heat and flip onto the eggs on the tortilla. Basically, sandwich the cheese between the egg and the spinach.
Wrap it up and eat. I don’t recommend making this a meal prep type breakfast – it stays a bit wet, so your tortilla would be soup by lunch time. It takes 5 minutes to make, so I would say make it when you want it.
The contents, as posted, with 3 eggs, is about 10 grams of carbs. Add the wrap I used and it’s 38 grams.
Without the tortilla, this could definitely be a breakfast bowl….add some bacon, ham, steak, leftover roast, sausage or a meat patty and you’ve got a protein powerhouse with some vegetables. Pretty good deal.
I had my breakfast at 9:30 am and was still not hungry at 1 pm, so this, like the oatmeal breakfast, has staying power.
