Sloppy Joes – Big Mac Style
I hate to admit it, but my menu plan this week just went all catywhompus. I had the plan, and then some ingredients were M.I.A., or I had no interest in cooking.
I suppose it was a strange week, weather-wise, and the job….wellllllll.
Regardless of the reasons why, it got shifted and changed and it is what it is.
Monday was Big Mac Sloppy Joes – I saw the name somewhere I was prowling and figured I’d wing it. It turned out pretty good.
- 1lb ground beef
- 1 onion (medium, chopped)
- salt & pepper
- 1 tsp garlic powder
- 1/2 cup mayonnaise
- 2 TB mustard
- 2 TB vinegar or dill pickle juice
- chopped dill pickle – as much as you like/prefer – I put in 2 small
- 1/2 to 1 tsp paprika
Cook the ground beef and while it is doing its thing on the stove, mix up the sauce. Adjust the seasoning as you go. Give the flavours time between changes to blend so you don’t change something too much and hate everything!
When the ground beef is about halfway cooked, add the onion and spices and cook the rest of the way.
Once it’s cooked, let it cool just a couple of minutes then add the sauce in. Cut open some buns, toast them if you like, and add some of the sloppy joe mix. We added cheese slices to ours, because all the best burgers have some cheese on them!
Serve with something good for you, or not. 🙂
Tuesday was fend for yourself, there were leftovers. What actually happened is that I reheated a serving of macaroni and cheese, a serving of pasta Alfredo and a serving of spaghetti and meatballs. Turned out to be a pasta night, but all I had to do was heat them each up on the stove with some cream added to the mac and cheese and the Alfredo to help it become creamy again. Reheated is sometimes dry so add a little cream, milk or even water to help loosen up the sauce. I had Cheerio’s.
Wednesday was supposed to be split pea soup. I forgot to check the freezer to see if I actually had a ham bone and I also had no idea (still don’t) where the half bag of split peas I stashed is. My plan then was to switch Thursdays meal – stroganoff – with the pea soup, giving me another day to figure out where ingredients were. Turns out – no ground beef left! What craziness is that?!
So we had hot dogs and french fries. As you do.
Thursday became clam chowder, because the ingredients for that, I knew for absolute sure, I had and I knew where they were. Small victories.
Friday was supposed to have been Salisbury Steak – but, again, no ground beef and very little motivation to brave Costco. It actually ended up being another fend for yourself. The mancub and his girlfriend had gotten food late in the day from somewhere so they weren’t particularly hungry, so I had…..I think I had tortilla chips with cheese sauce and salsa, but don’t quote me on it.
Saturday was supposed to be Pho – I remembered this about 2 pm. When I make Pho, I make it in my tall slow cooker and let the broth and spices do their thing all day long. That slow cooker also makes the broth incredibly hot, which is what I want. Also, I didn’t have the vegetables I want in Pho, so it dropped down to Shake ‘n’ Bake chicken drumsticks, Kraft dinner and salad. I prefer homemade mac and cheese, but sometimes you just gotta have KD.
Sunday – another attempt at orange chicken. The first time I made it, I didn’t dry off the chicken before battering it and the batter fled the scene of the crime. It all tasted amazing but there was more batter in the frying oil than there ended up being on the chicken. Very sad!
The orange chicken was much better this time around. It is, however, not a quick recipe, so make sure you’ve set aside some time when you’re making this. I want to change it to lemon chicken next time.
So, there you have it. A less than successful meal planning week. Hopefully I manage to do better this week coming!
