Taco Beef Pasta

Let’s be real – this is basically Taco Hamburger Helper, but I have no idea how Betty Crocker feels about their name being used for food that isn’t their food….ain’t nobody got money for a lawsuit!

This came about because I had emptied my freezer out and taken the proceeds to my ex. While there, he handed off stuff he won’t eat or cook for himself. Some kind of taco bowl kit came home with me. On a side note – have you ever smelled those taco bowls? Into the compost bucket they went. The little package of salsa (how cute) and the package of taco seasoning both ended up in the cupboard after that dinner and got brought back into play the other day when I wanted a beefy supper with not a lot of effort.

Turned out, it was a very minute effort on my part, I told him how to do what he was doing and the mancub did it all. It was good to be me.


  • 1 lb ground beef
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 package of taco seasoning
  • 4 cups of beef broth
  • 3 cups pasta – we used macaroni
  • 2 really rounded TB of tomato paste
  • garlic – a woman whose channel I watch on TikTok says chop garlic until someone asks if you’re okay

Brown the ground beef. If you’re cooking like the mancub, toss in the onion and bell pepper, also. Once done, add in the taco seasoning (or make your own – some chili powder, cumin, paprika, cayenne, Mexican oregano if you have it).

Add in the tomato paste and get it mixed in very well.

Pour in the broth and bring up to a boil. Add the pasta and cover. Drop the heat down to a fast simmer and cook until the pasta is done to your liking (about 15 minutes).

If it isn’t quite thick enough for you, take off the lid and let it simmer a little longer – it will also thicken as it cools. We did add the little package of salsa just to not waste it. And then we added hot sauce, because it’s almost mandatory in this house.

Valentina hot sauce is spicy, but it’s a smoky spicy and pretty mild. Tajin has salt in it, but is awesome for a little flavour kick…put it on fruit…trust me.

If you want to, add a cup or two of shredded cheese. I bought cheese specificially to do this very thing, put it in the fridge and forgot about it until 4 days later. I suppose it proves how good the meal is on its own. Cheese will only gild the lily!

Serve it.

Saucy, spicy ground beef, taco seasoning, vegetables. Simple supper.

Super simple, quite flavourful. Ingredients you can spell and pronounce. One pot, easy enough for a non cook to make. With the right kind of pasta, this could be keto and definitely low carb.
