Texas Sheet Cake

I needed chocolate. Had to have chocolate. Didn’t want brownies. Didn’t want cookies. Figured I’d give a chocolate cake a try. This is The Pioneer Woman’s recipe.

Let me preface my mess up with this: the recipe and instructions are very clear. I had a brain fart. I do not have a sheet cake pan. The closest I have is about half the size. So I figured I would split the batter between two 9×13 pans.

I mixed the dry ingredients, flawlessly. Then there I was, putting together the butter, cocoa and boiling water in a saucepan, when splitting one recipe into two pans became, double the recipe!

Fortunately, I figured it out before I put anything together or baked it.

So, back to the dry ingredients, to double up the flour and the sugar. After this, it all went pretty smoothly…except the slopping over the edges of the barely big enough bowl.

Ingredients:

  • 2 cups flour
  • 2 cups sugar
  • 1/4 tsp salt
  • 4 heaping TB cocoa powder
  • 1 cup of butter
  • 1/2 cup buttermilk
  • 2 whole eggs, beaten
  • 1 tsp baking soda
  • 1 tsp vanilla

Icing:

  • 3/4 cup butter
  • 4 heaping TB cocoa powder
  • 6 TB milk
  • 1 tsp vanilla
  • 2 cups icing sugar

In a mixing bowl, mix the flour, sugar and salt.

In a saucepan, melt the butter. Add the cocoa and stir together thoroughly. Add boiling water and allow the mixture to boil for 30 seconds, then turn off the heat.

Pour it over the flour mixture and give it a bit of a mix. This will help cool it down so you don’t cook the eggs when you add them. (Scrambled egg cake is probably not the crowd-gatherer you would hope for.)

In a measuring cup or a small bowl, pour the buttermilk and add the beaten eggs, baking soda and vanilla. Stir that mixture into the flour mixture.

Pour into your prepared pan, sheet or not, and bake at 350F for 20 minutes. If not using a sheet pan, your time will vary. Mine took about 40 minutes each, but they were much thicker than a sheet pan would be. I just baked until my toothpick came out clean.

Chocolate cake with chocolate icing.

While the cake is baking, melt the butter for the icing in a pan. Add the cocoa and mix well. Turn off the heat. Add the milk, vanilla and sugar.

Mix thoroughly and pour over the warm cake.

I actually poked holes in the second cake with a straw (a big straw – should have used a smaller one) and made it into a poke cake. Fun times!

This is not at all low carb or keto, but it is chocolate and I’m so happy!
