Lemon Lime Shrimp with Shishito Peppers

I kept seeing these bags of peppers at Costco. I was curious but too wussy to buy them for $9.00 only to find that I didn’t like them. Then I saw my daughter’s Instagram feed and lo and behold, she had made dinner with some charred shishito peppers.

Immediately…..”how were they?” “Are they spicy?” Her response? One in 10 is spicy and even then, they aren’t really spicy. So, off to Costco I went and lemon lime shrimp with shishito peppers came to be.

Ingredients:

  • 1 lb of uncooked shrimp
  • juice of 3 limes
  • juice of 3 lemons
  • garlic – 1 or 2 cloves, or however much your heart tells you to add
  • 20 shishito peppers – you can leave them whole or seed and take out the membranes
  • 2-4 cups of baby spinach
  • 1-2 TB olive oil
  • 1/4 cup feta cheese
  • Rice or cauliflower rice

Mix the shrimp, lime juice, lemon juice and garlic in a bowl and let marinate.

When it’s time for dinner, heat up the oil in a large frying pan. Toss in the shishito peppers and char them a little bit….or a lot, depends how much charring you like.

Add in the shrimp and the marinade and cook until the shrimp is pink and starting to curl.

Put the spinach and feta and give the spinach time to wilt, because we all know it will. 🙂

Spoon over the rice or cauliflower rice…or serve with some crispy crust, chewy bread. Got to get that sauce!

Aside from marinating time, this takes 15 to 20 minutes to make.

It’s pretty keto/low carb.

As a reassurance – I took the seeds and membrane out of the peppers and they are genuinely not spicy. I had one that sort of made my tongue tingle for a second.
