They aren’t cookies! Everybody just calls them that…because they’re round, maybe. I don’t know. I also don’t know what I would call them if I was in charge of naming them, so perhaps Pickle Cookies is good enough. I’m a little bit foul-mouthed, so who knows what they would have ended up being called.
These have lots of possibilities. Different cheeses with different pickles will give you quite different flavours. Different crackers will change the flavour profile as well, so these are a great personalized little snack.
- crackers – I used Ritz, but don’t limit yourself
- cheese – I used cheddar, but oooohhhh the possibilities!
- Pickles – I used dill and cut them into rounds, but again, the possibilities…spicy, sweet, beet, onion
- Air Fryer, toaster oven or oven
- non-stick spray, parchment paper or silpat
Set out however many crackers you would like to snack on.
Cut up enough cheese to put a piece on each cracker.
Cut up or take out enough pickles to put a piece on each cracker.
Place a pickle on each cracker and top with a piece of cheese. You don’t have to make them all the same if you don’t want to. 🙂
I sprayed the tray and under tray of my air fryer with non stick spray then loaded the cracker stacks onto the tray.
They went in at 350F for 6 minutes and that was a tiny bit too long….some of the cheese melted right off the crackers and that’s a shame.
Next time, I’ll put them in at 300F and just keep a really close eye on them.
They’re a lovely little snack that isn’t too complicated but is kind of an event.

- Triscuit black pepper crackers
- Veggie thin crackers
- Asiago crackers
- cowboy candy
- banana peppers
- bread & butter pickles
The ideas are just piling up!
